This sauce is to die for on my Kale, Sweet Potato, and Black Bean Enchiladas. But, it would also be really good on nachos or just as a dip for chips. Also, I could drink it. Not kidding.

What is cashew cheese sauce/aioli?
Cashew cheese sauce or aioli is a creamy, “cheesy” sauce made with cashews. I put cheesy in quotes because these recipes usually don’t actually contain cheese. Most of them use nutritional yeast which gives it that cheesy, subtly nutty flavor.
How do you make cashew cheese sauce/aioli?
To make cashew cheese sauce or aioli, combine cashews, nutritional yeast, oil, garlic, water and seasonings in a food processor and blend until smooth and creamy. Add water or oil as needed to achieve desired consistency. My favorite seasonings to use are paprika, cumin, salt and cayenne.
What should you use cashew cheese sauce/aioli for?
You can pretty much use it on anything that you’d use queso for. Here are some of my favorite recipes you can use this chipotle cashew aioli (aka cashew cheese sauce) with:

- 1 cup cashews
- 1/4 cup nutritional yeast
- 1 tbsp olive oil
- 1 garlic clove
- 1/2 cup and 2 tbsp water
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1 tbsp packed fresh cilantro leaves
- Combine all ingredients in food processor and blend until smooth and creamy.
- Macadamia nuts also work really well in this recipe if you prefer them over cashews.
