This Gingerbread Skillet is basically banana bread, chocolate chip muffins and gingerbread cookies all in one. Your taste buds are gonna freak the F out because it’s that good. Also, don’t tell anyone but Santa told me he would very much appreciate if you made him one of these. You’ll bump right up to #1 on his nice list.
Ginger, nutmeg, cloves and cinnamon are the essential spices for gingerbread. I also like to add vanilla extract because it complements the spices really well.
I know eating around the holidays can be super stressful. We are constantly told what we “should” and “shouldn’t” eat. We are flooded with messages that go against listening to our own bodies. We are all victims to diet culture. Intuitive eating is something I recommend practicing year-round but it’s especially helpful around the holidays.
Basically, it helps you give yourself permission to enjoy a variety of nourishing, pleasurable and satisfying foods. It can help you take the focus off of food and your body and open up space to focus on more meaningful things like spending time with family.
Listening to your body and honoring it’s needs in a way that feels good for you is what will ultimately lead you to feel your best. When you restrict yourself or tell yourself you shouldn’t or can’t eat something, you immediately feel deprived. This deprivation can lead to slowing of your metabolism and increased cravings. Your body is like “OMG I better get it while I can”. However, once your body trusts that you will no longer deprive it, these foods will become a balanced part of your eating and you no longer have to feel out of control around food.

- 3 eggs
- 3/4 cup mashed ripe bananas
- 1/3 cup and 3 tbsp coconut flour
- 1/2 cup almond butter
- 1 tsp vanilla extract
- 2 tbsp coconut sugar
- 3 tbsp maple syrup
- 1/2 tsp baking soda
- 1/2 tsp apple cider vinegar
- 1/2 cup almond milk
- 1 cup chocolate chunks (or chips)
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp cinnamon
- Preheat oven to 350 degrees.
- Lightly whisk eggs then mix with the remaining ingredients.
- Grease 10 inch skillet with coconut oil and pour the batter in.
- Bake for about 40 minutes (until golden brown and center is just cooked through).
